Summer is upon us, and in Texas, that means stone fruits, melons, and all different varieties of tomatoes! Including sun dried tomatoes.
I’ve had a bit of trouble finding a good sun dried tomato pesto in the markets I shop at, so, I decided to make my own! And, of course, since the end result was so stunningly beautiful, I also decided to snap a few photos of it, too.
Here is the recipe, just in case you have the same urge I did.
Allison’s Sun Dried Tomato Pesto
Ingredients
1 cup sun dried tomatoes
2 Tbsp parmesan cheese
1 Tbsp pine nuts
pepper to taste
1/2 - 3/4 cup of olive oil
Preparation
* Place tomatoes and parmesan into a food processor and beat until ingredients are a fine consistency but still crumbly.
* Add pine nuts and beat a little longer.
* Empty ingredients into a bowl and add the olive oil. Add enough that the ingredients hold together, and basically until it’s the consistency you like. I don’t tend to like mine very oily, but, that’s all up to what you like.
* Pepper to taste.
