This is a super easy recipe for a healthier homemade meatball. It’s hearty, and has just a bit of a sweet taste to it with the currants. They are also very versatile, and can be served with marinara, or other sauces, plain, or even on a sub sandwich with condiments of your choice.
Turkey Meatballs with Currants and Red Pistachios
INGREDIENTS
1 lb ground turkey meat
2/3 cup of ground oats (regular oats, not steel cut)
2 Tbsp cup of chopped red pistachios (alternatives could be regular pistachios or pine nuts)
2 large garlic cloves, chopped
1/4 cup dried currants
2 Tbsp chopped fresh cilantro
1 tsp oregano
2 Tbsp parmesan cheese (optional)
Salt and pepper to taste
PREPARATION
1). Mix all ingredients into a large bowl and knead together with your hands until all ingredients are evenly distributed.
2). Shape into 8 large meatballs or 12-16 smaller meatballs, depending on what size you prefer.
3). Using a skillet, cover bottom generously with olive oil (I like a lot, but, that’s up to you) and place meatballs inside. It may be more than one batch.
4). Cook on medium to medium high heat, turning meatballs 2 or 3 times to insure all sides cook and they cook all the way through. About 2-3 minutes on each side for smaller meatballs and a little longer on the larger ones.
5). Add whatever sauce you like and dig in! I actually like to eat them plain, and they are good that way as well.
