When I was young, my mom use to buy avocados all the time. And, I hated them! Mainly because I thought they were ‘slimy’. And also because I really wasn't into green or healthy food when I was young.
I’ve since come to my senses and not a day goes by that I don’t eat avocado in some form. I even put them in my breakfast smoothie!
I also like to keep some guacamole around for a snack. I’m not sure if it is considered to be a traditional guacamole recipe, as I don’t like tomatoes in my guacamole, but, it’s delicious nonetheless!

Quick and Easy Guacamole
INGREDIENTS
2 semi ripe avocados, diced
1-2 Tbsp diced red onion
1-2 Tbsp cilantro, chopped
Salt and pepper to taste
PREPARATION
Cut the avocado in half, around the pit, remove the pit, and dice the avocado while inside the skin.
Spoon out diced avocado into a medium sized mixing bowl.
Add all other ingredients and fold them in.
I lik my guacamole to be kind of chunky, with bigger pieces of avocado. If you like yours more smooth, and the avocados are ripe enough, you can just stir them more and until they are a smoother consistency.
