Quick + Easy Homemade (sort of) Black Bean Soup

Prep time: 30 minutes (plus 1 hour of simmering)


This super quick and easy black bean recipe is made with canned black beans. Some won't even want to try soup made with canned black beans, and that's fine. But, honestly, I've made black beans both ways, and it's really hard for me to tell a difference.


Plus, the entire point of this recipe. is that it be quick and easy. So, if you love black beans, and love soup, and have a little time to spare, give it a whirl!


What You'll Need:

2 Tbsp olive oil

1 red onion, diced

1 leek, diced

1 red bell pepper, diced

1 large poblano pepper, diced

3-4 garlic cloves, minced

3 cups of chicken broth

5 cans of black beans, drained and rinsed

3 chicken sausages, sliced and fully cooked

2 tsp cumin

1 tsp salt

1 tsp pepper

1 tsp chili powder

Cilantro


In a large soup pot, saute the onion and garlic for a few minutes until it just starts to become translucent. Add the peppers and spices and sauté a few more minutes.


Add chicken broth and 4 cans of black beans. Bring to a boil and then reduce heat and simmer for 1 hour.

While the soup is simmering, cook the sausages in a separate skillet until fully cooked. Be sure and wait until they are cooked to slice them or they will fall apart. Set aside.


Puree 1/3 of the black bean mixture and then add back to the soup. Add sausage and last can of black beans and cook for another 10 minutes.Add cilantro at the very end.


Serve hot with more red onion, sour cream, cheese, or your favorite toppings!
