Allison’s Chicken Avocado Tortilla Soup

.There is nothing like freshly homemade soup, and this recipe us one of the easiest ones to make. It turns out so well, you’d think it took a lot longer and a lot more effort to prepare! It's also really fun to play with and change some of the ingredients around, especially the peppers I sometimes add orange or red bell peppers just for some color.
This recipe is enough for around 6-8 servings and lasts about a week in the fridge. It also freezes very nicely!
Allison's Chicken Avocaodo Tortilla Soup
(Vegetarian/Vegan Option at bottom of page)
Ingredients:
1 large poblano pepper, diced
1 jalapeño, diced
I diced red onion
4-5 diced garlic cloves
1 Tbsp cumin
1 tsp coriander
I 14 oz can of fire roasted diced tomatoes
Black pepper to taste
Salt to taste
1/3 cup olive oil
4-6 cups of organic chicken broth
1 rotisserie chicken, pulled
1 can black beans
1 medium sized zucchini, cut however you like
3/4 cup chopped cilantro
1 small lime, juiced into finished soup
In each bowl:
cheese
diced avocado
tortillas

In large soup pot, combine olive oil, peppers, onion, and spices.
Cook on medium heat for about 5 minutes, just until the ingredients start to get slightly soft.
Add the diced tomatoes and cook for another minute or so.
Add the chicken broth and simmer on medium-high heat.
Pull the rotisserie chicken into bite sized pieces and then add this to the broth mix.
Strain and rinse the black beans, and add those to the mix as well.
Bring all these ingredients to a boil, and then simmer for about 15 minutes.
Add the cut zucchini towards the end and let simmer for another 5 minutes or so.
Turn heat off, add cilantro and lime, and then cover for a few minutes.
Serve with the cheese, avocado, and tortillas.
Vegetarian/Vegan Option
Ingredients:
1 large poblano pepper, diced
1 jalapeño, diced
1/3 cup diced red onion
1 Tbsp cumin
1 tsp coriander
1/4 - 1/2 cup fire roasted diced tomatoes
Black pepper
Salt
1/3 cup olive oil
4 cups of organic vegetable broth
1 can of cannellini beans
1 can black beans
1 medium sized zucchini, cut however you like
1 medium sized yellow squash
3/4 cup chopped cilantro
1 small lime, juiced into finished soup
