Savoy Cabbage Salad with Asian Pear and Hard Goat Cheese

Saves for 2-3 days in the fridge


The perfect salad for any time of year, and a perfect balance of sweet and tart.  If you want to mix in regular pears instead of apple pears, that would make it a little sweeter.  Add some protein, like chicken or salmon, and make it a bit more substantial. 


Savoy Cabbage Salad with Asian Pear and Hard Goat Cheese

Ingredients

Half a head of Savoy cabbage, thinly sliced

1/2 cup daikon radish, thinly sliced

1/2 cup Asian pear, thinly sliced

1/4 cup raw pumpkin seeds


Dressing

1 Tbsp whole seed mustard

1 tsp maple syrup

1 tbsp olive oil

Dash of salt

Dash of pepper

1/2 tsp lemon juice

1/3 cup Shaved hard goat cheese 


Preparation

Whisk together all dressing ingredients and set aside.

Mix all salad ingredients together. 

Add half of the cheese.

Toss in dressing until it covers all salad ingredients.  

Top with the remainder of the cheese.
